It’s summer and summer means fresh garden vegetables. Tripp and I have a small garden that consists of a short row each of cucumbers, squash, zucchini, bell peppers, sunflowers, and tomatoes. There are two rows of okra and six rows of corn. Then we have jalapeños and melons filling in the empty spaces. After moving it to different parts of the yard every year since we’ve been married, we’ve finally found our sweet spot. Our garden is looking the best it has ever looked and we’re able to bring fresh vegetables inside daily.
Our over-abundance of green tomatoes, however, did not come from our garden. A sweet truck driver named Byron that works with my husband has been bringing vegetables from his garden to share with all the men on the logging crew. He’s generously shared corn, squash, zucchini, cucumbers, and green tomatoes. The first time he brought vegetables to the woods to distribute, Tripp brought home enough green tomatoes to make these dilled green tomatoes. Five pounds of tomatoes for pickles and a few extras to set on the windowsill to ripen—I thought that was a lot of tomatoes. But a week later, Byron sent Tripp home with over fifty pounds of green tomatoes. I made the conscious decision to use as many as possible before they go bad. I refuse to let Byron’s hard work and generosity go to waste.
So here we are! Figuring out how to cook and preserve green tomatoes one recipe at a time.
This muffin recipe was the one I was most excited to try. My husband and I loved these. My kids on the other hand, not the biggest fans (more for me, right?) I get it though, tomatoes in a muffin? That’s weird. But remember, tomatoes are actually a fruit, so there’s no reason tomato muffins can’t have a spot in the recipe book right beside blueberry muffins.
This recipe was very easy. I only had to try it once to know it was a keeper.
