Squash Boats

Summer, for us, means an abundance of squash. This is a fun, delicious way to use some of them up without heating up the oven. We like to grill these boats, but I have cooked them in the oven on occasion. They turn out well either way.

These make quite the impression, but are super easy. The trick is to keep the skin intact, but hollow it out enough that it creates enough of a ”boat” to hold all of the goodies inside.


The kids love the playfulness of the boat and can’t get enough of the cheese and bacon goodness inside. This was also one of the first side dishes I threw together that really impressed my in-laws, so I proudly keep it in the summer grilling rotation (not that they’re difficult to impress, but I wasn’t much of a cook when Tripp and I were dating).
