Green Tomato Salsa

I'm still here and still have about a million tomatoes to cook or preserve before they go bad in a few days. This recipe was definitely the easiest. It was also my husband's favorite of all the ways I've tried to use these green tomatoes.



Here's the recipe! It's pretty straightforward and is guaranteed to be a crowd pleaser. I'm planning on making as much as I can and freezing in freezer bags. When we're ready for more we'll just thaw in the fridge and pour in a bowl. Serve with tortilla chips or add to the top of fajitas. Enjoy!
